【Chiba Sakura】 A single-house restaurant located in the suburbs of Sakura City, Chiba Prefecture. A first visit to a top-class restaurant that has won the Tabelog Gold award. The owner, Mr. Sugioka, overflowing with love for his hometown Chiba, explains the details of each dish as it is served. Before starting the course, I was immediately impressed by the wonderful idea of serving water in glasses with ice. Sugi Course ◇~The chef's first gift~ Fixed point Tomato candy ◇Off-menu: Sardine ◇Blessings of the earth The carefully selected rare honey has a wonderful sweetness. ◇The charm of Chiba At first, peanuts and Ise lobster, the more you chew, the more chocolate comes out and the flavor changes. ◇The other side of the carrot The chef, who actually dislikes carrots, creates a dish that is incredibly sweet, made in a high-temperature oven, truly the other side of carrots. ◇Our home cream stew ◇Exciting school lunch Based on the fried bread the chef loved in school lunches. ◇Off-menu: Sea bass with pancetta A dish that surprises with its appearance, using rare caviar 25. ◇Pike conger ◇GV Bonito ◇Pufferfish flan The truffle on top is also delicious. ◇Off-menu: Eel ◇Sugi Sushi TYPE-R Clams, enjoying further flavor with the highest quality seaweed. ◇Off-menu: Meat of the Kyōn A type of deer, popular as game cuisine. The course, which includes three secret dishes not listed on the menu, totals over 20 dishes and lasts about three and a half hours. However, that time feels fleeting, as the chef's meticulously crafted worldview is overwhelming. I am happy to have encountered a restaurant that evokes emotion after a long time while exploring new restaurants in Japan.
