Shouan is a restaurant proud of its stone-ground, coarsely milled hand-made soba. Focusing on Hitachi Aki soba, it uses carefully selected domestic ingredients to serve freshly ground, freshly made, and freshly boiled soba. The tempura, in particular, is fried in cottonseed oil, offering a light and crispy texture. It's a place where you can savor aromatic and flavorful soba in a pleasant atmosphere.
