Ultimate Aged Meat] Direct from Sakaeya Shiga. The new course is now available to enjoy the condensed flavor of the meat with all five senses. Dry-aged beef directly from Sakaeya in Shiga, the sacred land of the meat world. The "treatment" of the meat, which goes beyond mere aging, gives it a mellow, nutty aroma and surprisingly rich flavor. Rare "Ranchi" is slowly roasted and served in a 120g volume. The excess fat is broken down and the melt-in-your-mouth texture will make even the most discerning gourmets swoon. Enjoy the blissful pairing with wine to your heart's content.

Main ingredients... apple, pan-fired tea, chamomile, yuzu (juice and peel). This non-alcoholic drink incorporates the important 'bitterness' for enjoying food with yuzu juice and peel, making it slightly more adult. It is based on apple with refreshing pan-fired tea, creating a foundation enhanced by chamomile while yuzu juice adds a refreshing acidity, and yuzu peel creates a refined and crisp bitterness = aftertaste.
Main ingredients... Grape, Cassis, Black Tea, Clove Black Tea, Black Grape, starting from the astringency common to Cassis, the sweetness and acidity of each ingredient are harmoniously balanced, expressing a spiciness like Syrah with black pepper and Sichuan pepper. It has depth and impact that does not get overshadowed by strong dishes, and it never interferes with the main dish.
