At a popular restaurant that was crowded, I was guided to my seat after a short wait, which heightened my expectations. The thin soba noodles were visually appealing, and the aroma of the buckwheat from Hokkaido was delightful. When lightly dipped in the soy sauce-based broth, the smoothness of the noodles was further enhanced. The tempura was lightly battered and crispy, allowing me to enjoy a variety of ingredients such as maitake mushrooms, shrimp, eggplant, shishito peppers, and young corn. Both salt and the broth complemented the dish well, and I was satisfied even with the soba water at the end. The aroma of soba tea was also pleasant, and the effort put into the tied mitsuba served with the soba brought a sense of calm.
