Yabusoba is located in Yashio City and boasts a serene and spacious interior reminiscent of a traditional Japanese restaurant. The particularly popular katsudon features thick pork loin that is expertly prepared, offering a delightful texture. The soba is also noteworthy, with a gentle aroma and accompanied by crispy tempura bits, showcasing meticulous attention to detail. I heard about a good soba restaurant, so I visited there at lunch time with a friend. We had the rustic soba noodles with pork and ume omusubi. The soba noodles were filled with pork and onions. It was delicious, with plenty of umami from the dashi broth and sweetness from the pork. The soba noodles were thick and tasty with a strong soba flavor. It went well with the omusubi.
