A izakaya specializing in shellfish and fish roe, 'Kaisuke'

'Kaisuke' in Hachioji is a unique izakaya that focuses on shellfish and fish roe. At the U-shaped counter, you can enjoy the chef's skills up close, with a diverse array of dishes that pair perfectly with drinks. The shellfish sashimi and golden dashi oden are particularly rich in umami, making them great accompaniments to alcohol. The warm hospitality and cozy atmosphere make it a place you’ll want to visit again and again.

Sitting at the counter and watching each dish being prepared right in front of me is exciting. The first bite, wrapped in seaweed with the restaurant's name, grilled and served with a flat shell clam, is very fragrant and instantly lifts my spirits. The sashimi and grilled shellfish are all fresh, especially the red clam, whelk, and surf clam, which are plump and fantastic. I'm surprised by the small risotto made with the broth from grilled scallop shells, and the hot pot allows me to enjoy the white fish roe and oysters in a rich ankimo miso broth, which is delightful. The final zosui (rice soup) is rich in flavor, and adding a little yuzu pepper makes it even more irresistible. The friendly interactions with the staff are pleasant, and I have a great time all the way to the last fruit.
