Located just a 5-minute walk from Yashio Station, Makotoya is a well-regarded soba restaurant in the area. The interior exudes a clean and comfortable atmosphere, creating a vibrant space. The duck nanban seiro soba, in particular, is a standout dish where the tenderness of the duck complements the rich flavor of the broth, making it a reason to return. This establishment showcases excellent craftsmanship, allowing you to enjoy the aroma and texture of hand-made soba.

The shop has a calming Japanese atmosphere with a noren (fabric divider) hanging at the entrance. The fragrant, thin soba noodles have a nice chewiness and slide down the throat smoothly. The seiro (bamboo tray) enhances the flavor, and the dipping sauce was well-balanced and satisfying. The dipping sauce made with chicken and green onions, infused with the aroma of charcoal, was rich in dashi (broth), making it easy to get lost in the meal. The cold dipping soba was generously topped with ingredients, and it was enjoyable to pour just the right amount of sauce over it. Even the soba water was rich in flavor, allowing me to savor the aftertaste until the very end.
