We start cooking the meat at low temperature 3 hours before your visit to bring out the umami flavor. We finish by crisping up the surface and serving it piping hot just before serving.
Hitsumabushi allows you to enjoy three different flavors at once. The tea pickled in dashi broth, especially made with bonito flakes, is exquisite. Please try our special Hitsumabushi and savor the taste.
When it comes to Ise Udon, it is a specialty of Ise, but this 'Matsusaka Ise Udon' is an original udon that can only be eaten at our store. We placed sweetly simmered meat on top of the udon. When you eat it, please mix the meat and udon together. The fat from the meat mixes well with the udon broth, creating a synergistic umami effect. Once you try it, you will want to eat it again. Please try it once.
