Dashi-maki tamago is all about the dashi. The soba dashi at Keyakitei is made from soy sauce found after searching and various types of katsuobushi combined, all handmade with care every day. That's why, at this soba shop, we use plenty of our homemade soba dashi in the dashi-maki tamago. The finished dashi-maki tamago has a nostalgic and soft flavor. It is the most popular signature dish at Keyakitei.

In Toyama, fresh means 'kitokito'. Toyama Bay has both the warm Tsushima Current and the cold water unique to the Sea of Japan, allowing both warm-water and cold-water fish to inhabit the area.
