This ramen uses a triple soup made by combining tonkotsu, chicken, and vegetable broths. The robust umami of tonkotsu, the mellowness of chicken, and the aroma and depth of flavor of vegetables create a complex yet gentle taste. A special homemade chili oil and Sichuan pepper with the flavor of sesame and a moderate spiciness, combined with the umami of minced meat. It goes well with our proud triple soup and back fat. Adding a soft-boiled egg enhances the mellowness within the spiciness, allowing you to enjoy it even more.
Cabbage, onions, carrots, and bean sprouts are boiled. Not only are the vegetables placed on top, but also the sweetness derived from the warm vegetables adds a deeper and gentler flavor to the soup, emphasizing the richness of the Nobata Hope soup.
This special miso base is made by carefully aging three types of miso to complement the triple soup and rich back fat that are the pride of Nogata Hope. The sweetness of potatoes and the mellowness of back fat combine to create a gentle flavor that emphasizes the harmony typical of Nogata Hope. Enjoy it with the fresh aroma of green onions.
