For the whole table, served to share. In Sri Lanka, the meal is rice and curry. Rice goes in the middle of the plate, and curries, vegetables and sambols land around it, all at once. Nothing is eaten on its own. You take a little rice, mix in a spoon of this and a spoon of that, and build the bite yourself. Start with the dhal, then reach for the sambol when you want the heat. This is that meal, put together by the owners. What they order when they eat here with family.

For the whole table, served to share. The Favourites table, taken further. Vaira’s jaggery beef and the banana leaf bream at the centre, the bream opened at the table. Rice and a hopper each alongside. In Sri Lanka the number of dishes on the table tells you the occasion. This is the count for a good one.
