Funazushi is made by salting the pregnant nigoro-buna and fermenting it with rice using lactic acid bacteria, resulting in a unique sourness and umami flavor. The choice of sake to pair with it is up to you. This is probably the only place in Kanagawa Prefecture that offers it!
