When you sit at the counter, they gently tell you about the background and origin of the ingredients for each dish, which makes you excited from the very beginning. The combination of lightly grilled bonito with straw and lactic acid fermented cabbage was so delicious that it made me involuntarily exclaim with its blend of acidity and umami. The fried anago (conger eel) and wild vegetables had a light batter, and the seasonal aromas wafted through the air. They have a selection of sake, natural wines, and even homemade soda, all of which pair perfectly with each dish, which is impressive. I lost track of time with the pleasant music playing from the records and the owner's gentle conversation. It’s a wonderful place where you can leisurely enjoy a course that highlights the blessings of Hiroshima with creativity, allowing you to rediscover the joy of eating.
