Sitting at the counter and watching the finishing touches being made right in front of me is very enjoyable. During the beginning, the combination of flat shell clam, red sea urchin, seaweed, and cashew nuts is fragrant and impressive. A bite of the red vinegar sushi rice with Seki mackerel, as well as the sashimi of summer pufferfish, sweet shrimp, and black abalone, each conveys its own deliciousness. The bowl with Hokkaido matsutake mushrooms and the fried white sweetfish are fragrant, and the crispy texture is pleasant. The black throat sea perch is briefly dipped in a kelp broth and matsutake mushroom hot pot style, layering flavors that make the soup delightful. The flow of the final egg over rice and the sweetness of the kumquat wrapped in a gentle skin is beautiful, allowing for a comfortable experience until the very end.

The attentive service made for enjoyable conversations over the counter. Just looking at the handwritten menu was exciting, and every dish that came out exceeded my expectations in taste. Starting with the monaka, I could truly feel the season with ingredients like firefly squid, bamboo shoots from Aiba, and butterbur buds. The combination of red vinegar sushi rice with squid and uni that doesn't use alum, along with a bowl full of Ise lobster and natural tiger pufferfish, was impressive. The shabu-shabu with monkfish and monkfish liver was delicious even with the seaweed, and the freshly milled Yume Shizuku rice paired well with black abalone and chirimen sansho. The experience flowed happily all the way to the finishing touch of amaou strawberry daifuku and fragrant roasted black tea, making it something I would want to recommend to my loved ones.
