Run by a father-son duo with training experience in Italy, this establishment offers authentic Italian cuisine that highlights fresh ingredients. The aromatic sauces and the exquisite texture of the pasta are particularly appealing, encouraging many customers to return. I entered a shop that is easy to find, just a short walk from Shin-Akitsu Station. The interior is new and bright, and since it is run by a parent and child, a warm atmosphere permeates the place. The first dish that came out was a salad with crisp vegetables and a wonderfully fragrant dressing that was surprisingly delicious. The peperoncino, with a hint of yuzu pepper, had a rich flavor from the green onions and shirasu, and the texture of the noodles was excellent. The creamless carbonara made with guanciale and the large roasted pork shoulder both allowed me to fully appreciate the flavors of the ingredients. The menu is extensive, and I was able to enjoy craft beer and homemade focaccia at a leisurely pace, which made me linger longer than I intended.
