The interior is clean and has a pleasant atmosphere, and they prepare each piece right in front of you at the counter. The dishes combine traditional techniques with new ideas, making it enjoyable to eat. You can feel the meticulous work of the craftsmen who trained in Ginza throughout the experience. The salmon roe had no fishy smell and surprised me with its smooth texture. The sweet shrimp was blanched just before serving, and its plump sweetness spread across my palate. The cucumber in the kappa maki was finely sliced, providing a great crunch, and I was impressed by the craftsmanship.

The chef gently teaches the proper way to enjoy the food, enhancing the appeal of the flavors. The flow of the kaiseki meal is meticulous, with no flaws in the finishing touches of the nigiri and rolls. The finely sliced cucumber in the kappamaki has a pleasantly crisp texture, reflecting the skill involved. They wrapped up the leftovers for me, which was a thoughtful gesture that warmed my heart.
