Ajisushi is made by carefully selecting the most delicious horse mackerel each season, marinating it in a secret vinegar passed down from previous generations, and gently molding it with vinegared rice. The combination of shiso leaf, green onion, fresh ginger, pickled ginger, sesame seeds, and vinegared rice creates a perfect harmony of flavors that spread in your mouth.
