This pork bowl with a striking black sauce raises expectations from its appearance. The sauce, which combines a roasted flavor, depth, and a slight acidity, pairs well with the rice. The two types of pork, loin and pork cheek, offer enjoyable textural differences, and both pair excellently with the sauce. Taking a small bite of the meat and then combining it with the sauce-soaked rice is very delicious. I also enjoyed the soft umami of the tofu with miso. Although there was a bit of a wait for the serving, I was satisfied to relax in the counter seats.
