In a store with an atmosphere that makes use of an old warehouse, you can spend your time comfortably. With the staff's guidance, I learned about the warehouse and felt the long history of brewing. The non-alcoholic sparkling drink is made using a method that removes alcohol later, and it has a very pleasant mouthfeel. The sauce made with fermented seasonings pairs well with game and local vegetables, and especially the Ezo deer goes perfectly with the flavor of wild grapes. The menuki is tender and crumbly, and it's enjoyable to wipe the sauce with bread that has persimmon seeds kneaded into it. From the miso crème brûlée for dessert to the soy gelato, and even coffee while gazing at the garden, I was satisfied until the very end.
