'Kasu' in 'Kasu Udon' refers to 'abura kasu', a flavor of the common people of Osaka. Abura kasu is made by deep-frying beef intestines slowly in oil, and it is a popular ingredient rich in collagen that uses the 'kasu' part separated from the 'abura' and 'kasu'. When kasu is added to udon, it creates a fragrant and rich flavor.
Our kasu udon is different from Osaka's kasu udon, as it is prepared to match the taste of Fukuoka, with a 'sweet' broth. Since we add 'kasu' from the broth stage, the fat content of the oil kasu blends well with the noodles, making it exquisite. Please enjoy our udon that is committed to the umami of 'kasu.'
