Fresh fish directly shipped from Shizuoka Hamamatsu, Kumamoto Amakusa, and Ehime, including bluefin tuna, water octopus, and bonito directly from Kesennuma, Miyagi. We actually visit the locations and interact with the producers and the people working at the fishing ports to receive direct shipments. We understand the thoughts and struggles of the producers and incorporate those feelings into each dish.
