As I pass through the small noren (curtain), a comforting atmosphere from the old days spreads out. Just looking at the colorful menu lined up on the wall fills me with excitement. The kind smile of the staff welcomes me, and that alone eases my heart. The warm mushroom soba has a perfect harmony of dashi (broth) and soy sauce, warming me from the core of my body. The dipping sauce for the tempura soba has the classic flavor of town soba, perfectly complementing the soft noodles and providing a great sense of satisfaction. When I pour the soba-yu (noodle water) after the meal, the aroma of the dashi gently spreads, allowing me to enjoy a happy feeling until the very end.
