We hope you enjoy the taste of authentic soba noodles that have been grown in the beautiful nature of Shinshu. Using the finest ingredients and the best techniques, we create delicious soba noodles that bring out the flavors of the ingredients. The soba noodles we serve are made with the highest quality soba flour, carefully selected and ground with a dedicated stone mill at a soba factory in Nagano Prefecture. Please savor the exceptional flavor that you cannot experience elsewhere.
Serves 1.8 people! You can't talk about Kan-no without eating this!! We also accept mixed orders with udon.
The ingredients for the tempura change with the seasons. Enjoy seasonal vegetables with our delicious buckwheat noodles. We also offer a combination with udon noodles.
At our store, we use a blend of carefully selected dried bonito flakes such as Katsuobushi, Karesuobushi, and Karasaba-bushi, as well as Hokkaido-produced Rishiri kombu in our own unique ratio to create a dashi that is rich in aroma and umami. Additionally, the miso is aged over two winters and two summers, and is based on the distinctive 【Haccho Miso】, which is characterized by a high umami content, a unique bitterness, and low sweetness. We blend this with the strong fermented aroma and umami of the medium-spicy 【Tokaka Miso】, and the gentle sweet flavor and firm yet sweet taste of the sweet and mild 【Tokushiro Miso】.
