Carefully selected five million stones from Fukui Prefecture were luxuriously brewed to bring out the original flavor of the rice. The deep deliciousness created by the harmony of aroma and taste.
The Chikugo River, the longest river in Kyushu, stretches 143 kilometers. In spring, rapeseed flowers bloom wildly along the embankments, and in summer, the river is lively with sweetfish fishing. The town of Tanushimaru, where Wakatake-ya is located, spreads along the middle reaches of this river. Abundant natural water springs from the gentle ridges of the Hinokuni Mountains, including the water of Mizunawa, becoming a rich natural blessing. From this abundant nature, the natural flavors of Wakatake-ya are born.
With a fruity aroma, the rich flavor of the rice spreads softly, making it a good introduction to sake! Perhaps that's why it has been loved since its release. It is a light and delicate sake, so when paired with food, the deliciousness doubles.

It has a ginjo aroma reminiscent of tropical fruits, and when tasted, the umami of 'Yamada Nishiki' spreads abundantly, with a mild sweetness creating a well-balanced flavor. When you drink it with the typical sense of a pure brewing, you are first impressed by its high aroma. You can feel a delightful fruit scent reminiscent of white peach, based on a delicious apple flavor. However, the lack of heaviness is thanks to the skill of the brewer, Sumikawa. I am in awe of the exquisite balance and the way the aroma stands out.
Hatsukame Brewery was founded in the 12th year of the Kan'ei era (1636) in what is now Shizuoka City, and moved to present-day Okabe Town in the early Meiji period. Okabe Town flourished as a post town on the Tōkaidō Fifty-Three Stations, and Hatsukame has been cherished as a sake that heals the body and mind of travelers. The history of Hatsukame Brewery and ginjo sake is long, and in 1967, it began sales to commemorate winning first place in all competitions at the National Sake Competition held by Nagoya Bureau and Shizuoka Prefecture, which was sponsored by Tokyo University of Agriculture at the time.

It has an aroma reminiscent of muscat grapes due to low-temperature fermentation, and when tasted, you can fully appreciate the sweetness and umami of the sweet potatoes. Carefully selected high-quality sweet potatoes (Kogane Sengan) are meticulously sorted, removing all unripe and damaged ones by hand. Additionally, the water used for preparation is natural water that springs from several hundred meters underground in the volcanic ash soil unique to Kagoshima Prefecture. The base original sake, which has been distilled and aged, is slowly rested, and finally blended with a strong-tasting young original sake, allowing it to be named 'Red Hare' (Sekitoba). By the way, 'Red Hare' is the name of a famous horse that appears in the Romance of the Three Kingdoms, said to run a thousand miles in a day.
