The meat that determines the quality of shabu-shabu. All of it is processed according to the original standards of shabu-shabu warm vegetables, utilizing years of experience. Only meat that meets our strict production management and internal standards is used. To ensure you can enjoy it at its freshest, the meat is carefully cut one piece at a time in the restaurant. It is served at a thickness that makes shabu-shabu incredibly delicious.

We discuss with farmers to select vegetables that pair well with shabu-shabu and source them accordingly. Some of the vegetables are specifically developed for shabu-shabu hot dishes. Additionally, we conduct a 'relay of production areas' without specifying particular regions, ensuring we source the most delicious vegetables of the season.

You can choose from 2 types of broth. Please note that customers who only order the single item menu will be charged a broth fee of 330 yen (tax included).

We added the ultimate white soy sauce that enhances the sweetness of the ingredients to a broth made from three types of seafood, along with hand-crafted bonito flakes made using the traditional hand-fire method. This is a warm vegetable broth that allows you to enjoy the natural flavors of the vegetables and the aroma of bonito at the same time.

A flavorful broth enriched with the umami of beef tail and Wagyu, simmered slowly with aromatic vegetables to bring out depth and fragrance. Adding some scallions to taste enhances the aroma and sweetness even further.

A refined flavor with a rich taste amidst a mellow sweetness. It harmonizes with the umami of the ingredients as you dip them.

A clear broth that enhances the natural flavors of the ingredients with abundant umami. It pairs excellently with ponzu and sesame sauce.

Using organic soy milk made by a traditional method of soaking whole soybeans thoroughly and squeezing them. By adding bonito and kelp broth, it becomes rich enough to create yuba while still being a mild broth suitable for shabu-shabu.

A broth based on chicken and seafood, enhanced with chili peppers and gochujang for a spicy and rich flavor.

A rich soup that enhances the flavor of the tail pairs perfectly with beef offal.

Layered with the richness of chicken bouillon in Hokkaido-produced kombu dashi, finished with the refreshing sourness of lemon for a clean aftertaste.
