I entered a small shop located just near Hiroshima Station, under the elevated tracks. I could see the inside of the shop through the glass, and the cheerful owner welcomed me with a smile, which made me feel at ease. First, I paired a Heartland draft beer with some fragrant edamame, and it instantly relaxed both my throat and my heart. The signature dish, negi shabu, features a mountain of sweet and crunchy white leeks that go perfectly with the broth. When I quickly dipped the Seto momiji pork and wrapped it in leeks to take a bite, the umami and aroma spread throughout my mouth, and I couldn't help but ask for a second helping. To finish, slurping up the udon soaked in the broth left me with a lingering happiness until the very end.
