The meat that determines the quality of shabu-shabu. All of it is processed according to the original standards of shabu-shabu warm vegetables, utilizing years of experience. Only meat that meets our strict production management and internal standards is used. To ensure you can enjoy it at its freshest, the meat is carefully cut one piece at a time in the store. It is served at a thickness that makes shabu-shabu incredibly delicious.
We discuss with farmers to select vegetables that pair well with shabu-shabu and source them accordingly. Some of these vegetables are specifically developed for shabu-shabu as warm vegetables. Additionally, we conduct a 'relay of production areas' without specifying particular regions, sourcing the most delicious vegetables available at that time.
You can choose from 2 types of broth. Please note that customers who only order the single item menu will be charged a broth fee of 330 yen (tax included).
We added ultimate white soy sauce that enhances the sweetness of the ingredients to a dashi made from three types of seafood, along with handcrafted bonito flakes made using the traditional hand-fired method. This is a warm vegetable dashi that allows you to enjoy the natural umami of the vegetables and the flavor of bonito at the same time.
A richly flavored broth made by slowly simmering aromatic vegetables, enhanced with the umami of beef tail and Wagyu, bringing out depth and aroma. Adding some scallions to taste further enhances the fragrance and sweetness.
A refined flavor with a rich taste amidst a mellow sweetness. The more you dip, the more the umami of the ingredients harmonizes.
A clear broth that enhances the natural flavors of the ingredients with abundant umami. It pairs excellently with ponzu and sesame sauce.
Using organic soy milk made by a traditional method of soaking whole soybeans thoroughly and then squeezing them. By adding bonito and kelp broth, it becomes rich enough to create yuba while still being a mild broth suitable for shabu-shabu.
A broth based on chicken and seafood soup, enhanced with chili peppers and gochujang for a spicy and rich flavor.
