전채의 집에서 만든 스모크와 햄이 향긋하고, 처음부터 설렙니다. 평어의 카르파초와 도미의 구이 정도도 완벽하고, 식감이 기분 좋습니다. 오리 로스트는 가볍고, 소스와의 궁합이 매우 좋습니다. 계절 수프에서는 복숭아와 안농 고구마의 포타주를 만날 수 있어 즐거운 변화가 있습니다. 아유의 한 접시와 흰자위의 고소한 마무리 등, 인상 깊은 요리가 많습니다. 취향에 대한 배려도 세심하고, 코스의 흐름이 매끄럽게 느껴집니다.
