The Wine: A true representation of Rheingau Riesling. This wine offers sweet lemon and stone fruit with a hint of petrol on the nose. On the palate this wine's fruit character really comes alive with sweet peach, nectarine and clementine but finishing strong with classic Riesling minerality and a touch of cream. The Pairing: This particular Riesling, being off dry, is best paired with a bit of spice. Try with our. Crispy Duck Wings, to balance out the chili or our Classic Buttermilk Fried Chicken to appreciate the depth of the miso mustard's flavor while balancing the richness of fried chicken. The wine maker: A wine maker focused on clean production, Robert Well's 90-hectare plot produces authentic Riesling with only organic fertilizer and herbicide free production. The Grafenberg south facing slope, outside of the town of Kiedrich, is considered one of the best in all of Germany. Spätlese is a ripeness distinction, specifically late harvest, and this vineyard does not begin its handpicked harvest until the month of October to allow for maximum ripeness. Spontaneous fermentation is used as long as possible before the inoculation of cultivated yeasts. The wines are allowed additional time with the yeasts before bottle conditioning to increase complexity. The 2003 now has had more than 15 years in the bottle and will be showcasing a richer color and soft acidity.

The Wine: In the northern end of the Côte de Nuits, Morey Saint Denis Pinot Noir offers wines of extreme character. Showcasing darker fruits like currants and blackberries, but also ripe cherry stewed in liqueur and tart cranberry. Traditional Burgundian notes of moss, minerality, truffle and leather round out the palate on this wine. The Pairing: A wine to perfectly compliment many aspects of your dining experience. Try with our French Onion Soup to cut the richness of the prosciutto and gruyere foam. Or try with our deviled eggs to feel the pea cream come into balance with the pork belly. For your entrée you can appreciate the perfect pairing our Long Island Duck Breast offers by appreciating Burgundy's ability to perfectly balance duck fat. Though you can feel safe to pair with any red meat dish on our menu as well, this particular burgundy offers greater tannin structure than assumed. The Wine Maker: Morey-Saint-Denis is a region dedicated to red wine, only about 5% of the yearly harvest are white grapes. Domaine Lignier-Michelot is a mainstay of the region holding both premier and grand cru climats. Domaine Lignier-Michelot focuses on low yields, with active pruning throughout the season. The wines are completely destemmed before cold macerating for five days then undergoing spontaneous fermentation. Post fermentation the wines spend extended time in oak of varying ages to increase complexity and depth. 2005 is one of the best vintages since the 1970's and is just coming into its prime. Appreciate the softer color and tannin this wine will present.
