This dish features three types of mushrooms and mountain vegetables piled high on top of Minakami-produced 80% buckwheat flour and 20% rice flour soba noodles. The main highlight is the extra-large tempura made with Minakami-produced brand-name maitake mushrooms called 'Sukuyoka'. You can choose between hot or cold soba, with the warm soba served in a gentle broth flavored with mackerel flakes and genuine mirin so you can enjoy it until the last drop. The cold soba is served with a fragrant bonito-flavored broth, and you can finish it off with soba-yu. It's a dish that will make you feel like you've truly arrived in Minakami! (laughs)
