Let's go see the proprietress! Himeji's B-Grade Gourmet is Himeji Oden! Oden is dipped in ginger soy sauce! This restaurant is not a Himeji oden restaurant. Please be careful! Let's go inside this long-established oden shop in Himeji! The restaurant opens at 5:00 p.m., and we arrived about 15 minutes after 5:00 p.m. The restaurant was quite full! Only counter seats are available inside the restaurant, and 13 people sit in round chairs. Oden is simmering in the middle of the counter. The inside of the restaurant smells wonderful with the aroma of dashi broth. There are three waitresses, but the proprietress? The proprietress? The proprietress? She is in charge of serving customers, serving oden, replenishing oden, and paying the bill. You can't say oden without permission! You can only order oden when the proprietress asks you to order it! I order while looking at the oden... If it's not cooked or not there, she tells me clearly (lol). (Laughs) "The daikon radish is boiling, but who wants some? (lol)...and then they ask for a show of hands. It's fun to have a conversation with the regulars. Why doesn't the proprietress serve Himeji oden? She doesn't want to dip the oden in ginger soy sauce after boiling it in a delicious broth! As the proprietress said, all the dishes were delicious with the broth simmering! The suji was especially tender and great! The proprietress speaks clearly, and I'm sure there are different tastes. I will be back for more oden from the proprietress!
