All of our beef is sourced from female Black Wagyu cattle. Female Black Wagyu cattle have less physical activity, resulting in tender muscles with a fine texture and evenly distributed fat, creating a beautiful marbling pattern that melts in your mouth. They are characterized by a sweet and rich flavor. The quality of the fat is good, and it is low in saturated and trans fats, making it considered healthy.
This cut is located on the backside of the shoulder blade among shoulder meats, characterized by a high proportion of red meat and fine marbling. It allows you to enjoy the umami of the red meat and the sweetness of the marbling at the same time.
This cut comes from the upper part of the front leg of the cow, known for its rare combination of lean meat and fat.
