Natural ice is ice that is carefully made over time using only the natural cold of winter. When water is frozen slowly over time, it becomes pure ice without impurities. This painstakingly made natural ice is transparent and free of bubbles. The natural ice made from the water of Yatsugatake in the Southern Alps, known as one of Japan's finest water sources, is of the highest quality in the country. Enjoy the delicate melt-in-your-mouth texture that is unique to rare natural ice.

We use half a whole melon luxuriously, with two types of flesh: green and red. We want you to experience the fresh and juicy taste of perfectly ripe melon directly, so we propose a simple yet luxurious way to enjoy it.

A parfait inspired by a Japanese garden, featuring beautiful shades of green. Enjoy the fragrant and deep flavor of matcha. It is layered with calamansi jelly, also known as shikikan, and semi-dried apricots for a pleasant acidity and texture contrast, combined with matcha cream and strained sweet red bean paste, as well as matcha chocolate crunch for a rich Japanese flavor. Topping it off with matcha sauce and Guérande salt enhances the sweetness and bitterness, changing the impression. Enjoy it in your preferred way until the last bite.

We have prepared a parfait featuring fragrant melon as the star, inspired by the refreshing feel of early summer. The sharp acidity of kiwi jelly, the refreshing taste of lime-scented custard, and the gentle sweetness of mascarpone cream harmonize exquisitely in your mouth. We luxuriously used two types of melon, green and red flesh, creating a juicy flavor that changes with each bite. Please enjoy this special cup that colors early summer, available only in this season.
