What is '100% buckwheat soba' and how is it different from the soba sold in general or the soba served at soba restaurants? Soba sold in general is recognized as 'soba' if it contains 30% soba flour. On the other hand, the soba served at soba restaurants, known as 'ni-hachi soba', is made with 20% wheat flour and 80% soba flour. '100% buckwheat soba' refers to soba made with 100% buckwheat flour without the use of fertilizers, pesticides, food additives, coloring agents, preservatives, etc. It contains many vitamins, especially abundant in the B-vitamin group. Please give it a try.
