The dishes served at Rinkontoro are all homemade. From pasta and bread to processed meats like prosciutto and salami, as well as anchovies, bottarga, and limoncello, we take great care to prepare as many ingredients as possible. Additionally, we source fish and meat in whole cuts whenever possible, breaking them down in-house to utilize every part, including the bones. We are committed to ensuring that the lives we receive are not wasted and that everything is used to its fullest potential.
