Mori Yu's specialty 'Meat-Wrapped Egg' features carefully prepared bonito broth and a unique blend of dipping sauce as the key elements. The fluffy egg and the savory flavor of the meat are exquisite, making it a popular dish even for the final course.
'Wagyu Beef Tendon Stew' is a specialty of Osaka, finished with a white miso base that the owner takes pride in. It inherits the flavors that were highly praised during training, and by simmering for over 3 hours, the beef tendon becomes surprisingly tender, infused with umami. The sweet and rich flavor of the white miso is exquisite, and it pairs perfectly with alcohol. Please enjoy the gradually seeping taste.
