We use a sauce made by grinding apples, pears, onions, and radishes into domestically produced sun-dried red pepper powder and red pepper paste, and then fermenting it at a low temperature for 3 months. It is so delicious that it forms a fan base ^^
A medicinal broth made by boiling 10 types of medicinal herbs including Ulmus davidiana, Cornus officinalis, Cornus officinalis fruit, Glycyrrhiza uralensis, Cnidium officinale, Angelica gigas, Astragalus membranaceus, Ligusticum wallichii, Zanthoxylum piperitum, and Ilex cornuta for 3 hours, and then cooking duck in it. It is a healthful dish with added ingredients such as ginseng, jujube, and garlic.
Grilled young duck meat aged about 4-5 months with as much fat and skin removed as possible, making it tender and soft, and it is also savory.
Nuts (sunflower seeds, pumpkin seeds, almonds, walnuts, jujubes, chestnuts, ginseng, jujubes, licorice, bay leaves, sweet pumpkin) are stuffed inside a duck's belly with glutinous rice, then placed in a clay pot and baked in a kiln for 3 hours. Crispy on the outside and moist on the inside.
