After strolling around Gujo Hachiman, I stopped by and was able to relax in a calm tatami room. The miso hot pot with Hida beef was rich and satisfying, with plenty of meat. The flavor of Gujo's miso was prominent, making me want to drink the soup until the end. The natural sweetfish was delicious whether grilled with salt or fried, and the sashimi had a remarkable texture and sweetness. The local miso stew set meal paired perfectly with the rice, and its aroma was addictive. The staff's attentiveness was meticulous, and the local sake was easy to drink, which made the meal even more enjoyable.
