This time, I went to Okayama, to a famous restaurant to eat Nissei's specialty, kakioko! It was Sunday and we had to wait for 2 hours lol! I've never waited so long for okonomiyaki before 😭. But I'm happy to have had the kakioko I've been longing for 😭! I'm so happy 😋👍

As you pass through the old noren (fabric divider), a calm space reminiscent of a traditional diner unfolds. The specialty water dumplings are handmade, with a smooth skin that has an excellent texture. When you bite into them, the savory flavor of the pork and the aroma of yellow chives spread delightfully, creating a very refined taste. The specially prepared light sauce enhances the quality of the ingredients, allowing you to enjoy them without getting tired of the flavor until the end. They are small in size, so before you know it, the plate is empty, making you want to order more. This is a wonderful place where you can leisurely savor the authentic taste that has been carefully passed down.

The calm atmosphere and sophisticated interior are very nice. The seafood curry, with the sweetness of onions and the umami of seafood, is aromatic and captivating. The ingredients, such as oysters, shrimp, and scallops, are served separately, allowing you to clearly enjoy each texture. They easily adjust the amount of rice and spiciness to your liking, so you can customize it to your preference. The salad is served in a Bizen ware dish, featuring a variety of vegetables, and the dressing is mild, with sweet potato as an accent. You can relax and enjoy attentive service while gazing outside from a window seat.

In a calm space remodeled from a private house, the sizzling sound of the iron plate is very pleasant. The okonomiyaki, which is steamed and grilled with a generous amount of cabbage layered on a thin batter, has a fluffy texture and a lightness reminiscent of Hiroshima-style. The special sauce, characterized by its sweet and sour flavor, combines with the sweetness of the cabbage, making it enjoyable without getting tired of it until the end. There is also plenty of fragrant pork, which greatly stimulates the appetite. Although it has a solid volume, it is cut in half for easy eating. The warm and meticulous service from the proprietress, who handles both grilling and customer service by herself, makes it a place where you want to linger.

When I took a bite, the savory flavor of the batter mixed with the deliciousness of the oysters, making me smile involuntarily. They cook it right in front of you, creating a lively atmosphere, and chatting over the iron plate is enjoyable. The friendly remarks and thoughtful attention from the staff made for a pleasant experience, allowing me to relax. The oyster-filled negiyaki could also be enjoyed with a refreshing ponzu sauce, keeping it interesting until the very end.
