Irori Ami-Tei

We offer carefully selected ayu from all over Japan. Kimura Ayu (Hikone City, Shiga Prefecture) is a pioneer in ayu farming! We have created a farming environment that surpasses natural conditions, using the beautiful spring water from the Suzuka mountain range in Omi Ayu (Aisho Town, Shiga Prefecture) to flow luxuriously, resulting in a fine body texture and aroma. Sudachi Ayu (Tokushima City) is raised in the clear Yoshino River, where we mix sudachi juice, rich in vitamin C, into their feed, producing fragrant ayu.

Omi beef tataki with grated daikon and ponzu sauce. This dish features Omi beef, one of Japan's three major wagyu, which is first grilled over charcoal for a fragrant finish and then cooked at low temperature to lock in the umami of the Omi beef.

Biwa Trout is a native species that inhabits only Lake Biwa, known as the jewel of Lake Biwa, and its catch is also limited, making it a highly valuable fish. It has a refined fat similar to that of tuna belly, and you can feel its rich umami, but it is not greasy and has a melt-in-your-mouth texture. Since it is a dish that is rarely eaten, please be sure to try it.

A unique delicacy from Shiga, rich in flavor. The flesh, concentrated with umami, pairs perfectly with sake. One bite reveals the deep richness and aroma created by fermentation, making you crave another bite.

This dish is carefully grilled over a gentle charcoal fire in an irori, resulting in an aroma-filled delicacy. The Omi chicken offers a firm texture and a rich flavor that expands with each bite. With every chew, the umami of the chicken combines with the scent of charcoal, creating a blissful taste that makes you crave a drink.

This is an elegant dish made with Omi beef, which Shiga proudly boasts, simmered in a sweet and savory sauce. The moderate sweetness and richness make it perfect as a companion for drinks. With every bite, the deep flavor of Omi beef spreads, making it a luxurious Shigure-ni.
