It is powerful, full-bodied, and has been aged to match his preferred taste. (First vintage 1975) ★ It uses Chardonnay and Pinot Noir grapes harvested from very old Grand Cru vines, and the special blending ratio is a closely guarded secret. Pinot Noir provides structure, breadth, and strength, while Chardonnay brings elegance, finesse, and smoothness. ★ The wine undergoes two rounds of racking. The first occurs immediately after pressing, and the second is done in temperature-controlled stainless steel tanks at 7 degrees. After fermenting separately by variety and village, it undergoes complete malolactic fermentation. It is then aged slowly in the deepest part of the cellar, 33 meters underground. It holds great potential for long-term aging.
