This "baba nabe" is neither cod nor monkfish, but just the right in-between flavors. In Tottori Prefecture, it is a common local dish that is not often sold on the market. Kaijin imports it directly from Tottori, so please give it a try.
In Osaka, it is quite rare to eat the local dish from Tottori called 'Babaa Nabe' or 'Babachan Nabe'. The name 'Babaa' refers to a type of fish, but its official name is 'Tanaka Genge'. The texture is rich in collagen between the skin and the flesh, and the meat is also very delicious. *We accept orders for two or more people.
