Junmai Ginjo Ginrei, brewed with Hokkaido-produced 'Ginfuu', pasteurized once and stored in ice temperature bottles. It has a solid umami and a crisp finish. A balance of the dry taste characteristic of Drunken Whale and the deep flavor from aging. Kochi-produced rice, Ginfuu, Sake Meter Value +7.
Special Junmai, Hiyaoroshi. A brewery located in Kesennuma, which has recovered from the Great East Japan Earthquake. A mellow flavor that has slowly matured with a single pasteurization. A Junmai sake with a balanced clear aroma and matured umami. Miyagi Prefecture rice, Sake meter value -18.
Rich and full-bodied flavor. This series was released in 2023 and won the Excellence Award in the Junmai Sake category at the Omachi Summit. The following year, in 2024, it won the Best Award in the Junmai Sake category at the Omachi Summit. Made with Tochigi-grown Omachi rice, Sake meter value -2.
Junmai sake from Uonuma. This sake was originally sold exclusively in the Uonuma region, which is the hometown of Hakkaisan Brewery and one of Japan's heaviest snowfall areas. It was created with the desire for people to feel the richness and greatness of Uonuma. Now available outside the prefecture through business routes. Made with Niigata rice, Gohyakumangoku, and has a sake meter value of +1.
Hiyama (chilled) Junmai Ginjo Super Dry. This sake is made from freshly pressed sake in spring, pasteurized only once, and then aged during the summer before being bottled as hiyama. It offers a refined dry taste as a super dry hiyama. Made with Miyagi-grown rice, Niigata Prefecture, Sake Meter Value +17.
A refreshing aroma reminiscent of muscat grapes. A clean and dry taste with a crisp finish. The mouthfeel is refreshing while still allowing the umami of the rice to be felt. Made with Yamagata-grown Yuki Megami rice and other ingredients, with a sake meter value of +8.
