This is a specialty dish from Shigure-tei. The main ingredient is sweetened herring. The tough and fishy herring is soaked for three days to remove the odor, making it soft and flavorful. It is served on top of warm Koshihikari rice from the local Kitakata region, sprinkled with salted daikon leaves, and seasoned with a refreshing touch of prickly ash pepper. This is the specialty dish of Shigure-tei, the famous Herring Rice Bowl.
Handmade soba from Shiguretei, a renowned shop in the Aizu Soba Artisan Association. Made with local flour for a rich flavor, firm texture, and smoothness. Served with a special dipping sauce that enhances the freshness of the locally sourced soba.
