We only use carefully selected, high-quality, and safe domestic live eels. The main production areas are Miyazaki Prefecture and Kagoshima Prefecture. We have a position in the store, and we let the eels rest slowly in our position after they are tired from transportation, preparing them in the best possible condition before serving them in the store.
At our restaurant, we offer 'Jiyaki Unagi' grilled over powerful binchotan charcoal without steaming. The charcoal intensifies the flavor, resulting in a crispy and fragrant exterior while the inside has a fluffy texture, characterized by the absence of greasiness due to the removal of excess fat.
The secret sauce of Kawahara is a homemade sauce created by the founder who traveled across the country tasting various eel restaurants and developed a unique blend through trial and error. This sauce, combined with the freshly grilled eel's fat, enhances the flavor of the eel to the fullest.
We use Hinode Hikari rice, which is produced in our hometown of Nara Prefecture, where we were founded. The grains are uniform, glossy, and have a moderate chewiness and stickiness, characterized by a rich and deep sweetness. Additionally, Hinode Hikari maintains its deliciousness even when cooled, making it suitable for bento boxes.
