Made with 100% domestically produced buckwheat flour, this soba is made with 80% buckwheat flour and 20% wheat flour. It is a well-known 80/20 soba that has a good balance of flavor and texture. It comes with grated daikon radish as a condiment. It is said that adding grated daikon radish enhances the sweetness of the soba, so please try adding it to the broth and enjoy.
Why is it called Seiro? In the early days of soba, it was not boiled like it is now, but steamed in a steamer. As a remnant of that, a vessel of that shape is used, and it is said to be named Seiro Soba.
This is a combination of regular Seiro Soba and Kawarari Soba, which is buckwheat noodles mixed with various ingredients in the center of the buckwheat flour (ingredients such as keshi nuts, yuzu, green tea, lemon, etc. are mixed in). (The ingredients include keshi nuts, yuzu, green tea, lemon, etc.)
