Speisekarte
Six home-made side dishes of vegetables, beans, seaweed, etc., and main dishes of fried fu and apple or fried tofu. There are also homemade pickles, miso soup with many ingredients, and a choice of two onigiri rice balls. The most popular dish is the "germinated brown rice. Brown rice has an image of being hard and shabby, doesn't it? The "germinated brown rice" is kept warm for three days. It is delicious for both children and the elderly. The ingredients of our homemade miso are all domestically produced, and include only soybeans, rice malt, and natural salt. Soybeans are cooked and mashed with melted snow water from Nagano Prefecture, and then mixed with rice koji made using traditional methods and salt rich in minerals made from seawater such as shimamasu, and left to ferment for 6 months. The result is delicious miso.
Available only at lunch time. Please choose 2 rice balls from the following: Sprouted brown rice (with black sesame), Amami-Oshima okaka (bonito flakes), wild sockeye salmon, Hakata cod roe, Nanko-ume plum, Hakodate Kanagi Suisan sesame kelp, Nuchimasu (salt), spicy takana (mustard).
