The main dish is a tender low-temperature roasted duck. The menu is rich in local ingredients and wild vegetables. Fuji-no-suke sashimi (a combination of king salmon and rainbow trout, a brand name fish of Yamanashi Prefecture), char-grilled sweetfish that is tender to the bone, and other delicacies.
It takes time to prepare as we make it fresh after receiving an order, but the freshly made soba is exquisite. It is finished with a thick and firm texture.
