A dish made by slowly cooking salmon raised in spring water at a constant temperature in Kiyosato. The fish has a delicate texture and high-quality fat due to the low water temperature. Finished moistly with confit and served with a citrus cream with a tangy flavor.

A dessert created in collaboration with mulberry farmers. Mulberry leaves, known for their health benefits, are carefully harvested when they are in a highly nutritious state, dried, and delivered to our store as tea. These mulberry leaves are generously used and baked together with white chocolate to create a terrine. The result is a dish where the deliciousness of mulberry spreads with a taste similar to raw chocolate.

We slowly cooked the most premium part of beef raised at the foot of Yatsugatake to make it moist and tender. The sauce is made with red wine from Yamanashi Prefecture and fond de veau. It is served with seasonal vegetables.
