(Head Bara) A part of the shoulder, it is called this because the meat is cut into a triangular shape. It has a good amount of marbling, is rich, and has top-notch flavor.
(Rib Maki) A part that wraps around the rib core. Like ribeye, it has a rich flavor and is prone to marbling.
(Tomosankaku) A part located at the edge of the shintama, on the outside of the shinshin. While it has marbling, the flavor of the red meat is stronger, with rich meat juice and a deep richness of fat.
(Misuji) Located on the upper part of the front leg behind the shoulder blade. The amount that can be obtained from one animal is relatively small, making it quite rare. It has a high content of extract and gelatin, resulting in a rich umami flavor.
(Sirloin) Refers to the latter part of the back meat, which is the loin of the three types of loin meat: 'Ribeye', 'Sirloin', and 'Tenderloin', with the best meat quality.
Brisket meat located between the ribs (sankaku). It is characterized by a lot of marbling. The richness of the fat and the sweetness of the meat are just right.
(Zabuton's) Located in the shoulder loin, on the side of the rib bones. It has a lot of fat but an excellent texture. The flavor of the meat spreads quickly and gradually seeps into the tongue.
(Hanesita) A long cut of meat from the shoulder to the back, closest to the head. It has a fine quality texture. The balance of lean meat and marbling is good, with a refined sweetness.
(Rib Core) This part corresponds to the core of the ribeye. Among ribeye cuts, it has the best balance. The meat quality is fine-grained and the fat is elegant.
(Tateme) is a part found within the outer and inner parts of the rib. It has a lot of fat and is the most flavorful and high-quality part. It is a part where you can enjoy marbling.
